Thin Mints

Ritz crackers (about 80)
1 lb. milk chocolate almond bark
1/2 teaspoon peppermint extract.

  1. Melt chocolate and stir in peppermint extract.
  2. Dip crackers in chocolate and let cool.

Oreo Truffles

1  lb. Oreo cookies (3 sleeves)
1 (8 oz) package cream cheese
1/2 teaspoon vanilla extract
1 lb. milk chocolate almond bark
1/2 lb. white chocolate almond bark (optional)

  1. Crush Oreo cookies to a fine powder (it’s easiest to use a food processor, if you have one).
  2. Using a mixer, blend cookie crumbs, cream cheese, and vanilla together until well mixed and creamy.
  3. Roll into small balls and place on wax lined cookie sheet.
  4. Chill in refrigerator, about 45 minutes.
  5. Melt milk chocolate and dip balls in. Lift out with slotted spoon and let excess chocolate drip off.
  6. Let cool on wax paper.
  7. Melt white chocolate and drizzle over top (optional)

Andes Mint Cookies

3/4 c. butter or margarine
1 1/2 c. brown sugar
2 Tbsp. water
2 eggs
2 c. chocolate chips
2 1/2 c. flour
1 1/4 tsp. baking soda
1/2 tsp. salt
3 boxes Andes candies

In sauce pan over low heat, melt butter; add sugar and water. Then add chocolate chips. Stir until partially melted. Remove from heat; stir, then cool for 5 minutes. Add eggs and dry ingredients; mix with a mixer on low speed until blended. Chill 1 hour. Make into little balls and bake on an ungreased cookie sheet at 350 degrees for 10-13 minutes. While still hot, put Andes candy mint on each cookie, let it get soft then swirl mint with spoon. Cool on baking rack.

Seven Layer Bars

1/2 cup butter
1 cup graham cracker crumbs
1 cup flaked coconut
1 cup (6 oz.) semisweet chocolate chips
1 cup (6 oz.) butterscotch chips
1 cup peanuts, chopped
1 (14 oz.) can sweetened condensed milk

Preheat oven to 325 degrees.
Melt butter in 9 x 13 pan.
Add next five ingredients.
Carefully pour sweetened condensed milk on top.
Bake 25-30 minutes or until slightly brown.

I would have thought andes mint cookies would look green. is the center of those white?

k, so I was going to hold off on the comments....however:
Oreo Truffles. Is it 1 lb of milk chocolate almond bark and 1/2# of white chocolate? Is it the other way around?

I so want to try all of these! My husband came home from work the other day talking about some oreo type thing that the gal wouldn't give the recipe to...I bet these are it. I'll have to make them and see what he thinks.
